The food is causing the prosperity to go down in the castle, but the prosperity being so low because of that is also causing the food to be reduced even more every day, to the point where it says both of the villages are adding around 20 a day to the food of the village but the prosperity, and the garrison like you said, are making it so it’s still in the red.

In Crusader Kings 3 you can execute infidels and foreigners without penalty. You can execute non-nobles without relation penalties in Bannerlord. The thing is, so far the only non nobles you can find and execute (outside the plot) are the rebel clans that take a city from its "rightful" lord.
I've found that if I "leave" the siege and then just "join the on going siege" it will start the siege but obviously you lose the influence and control of the troops you should of had in a siege you initiated. It's a bummer but hopefully gets fixed. A damn shame but it'll be fixed soon fs.
There is no way of increasing health in game without increasing Str or Ironflesh, and altering ironflesh values also affects the npcs, so you'll be buffing both yourself and the npcs. get better armor and get a horse. horses will put you above units without and will soak up some of the damage in melee.
